Description
Vineyard
Cecilia Pinotage is vinified from a vineyard in the land locked area of the Ceres Plateau growing at just over 1000 meters altitude. This predominantly fruit growing area is characterized by mild summers and snow cover in winter – South Africa’s version of Burgundy’s continental cool climate.
Winemaking
The grapes are hand-harvested in 20 kg crates and crushed into large open-top barrels with 10% whole clusters. where regular punch-downs are done. After a cold soak of 36 hours native yeasts conduct the fermentation at a gentle pace. When fermentation is complete the skins are gently pressed and the wine is siphoned into inert barrels for 14 months before bottling.
Tasting Notes
Fresh nuances of red currant and cherry on the nose, with a touch of spice are followed by a light yet focused fruit on the palate. A framework of fine, ripe tannins contribute to create a balanced wine with a lingering finish.
