Description
Vineyard
Cecilia Shiraz is made from a bush vine vineyard close to Darling in the West Coast region of South Africa. Cool air from the nearby Atlantic Ocean, deep granite soils and low yielding bush vines deliver grapes that are exceptionally concentrated and packed with flavour.
Winemaking
The grapes were crushed and the must fermented with a combination of punch down and pump overs. After alcoholic fermentation 50% of the wine was racked into inert 500 litre French oak barrels and 50 % into 225 litre French oak barrels for malolactic fermentation. It matured for a further 15 months prior to bottling.
Tasting Notes
An opaque colour hints toward the dense layers of red and black berry fruit with subtle cracked pepper underneath which unfold on the nose. The palate of this full-bodied wine is well structured and rounded off with smooth, ripe tannins.
